Ingredients

  • 2 lbs chicken thighs (or breasts) sliced thin

For the chicken marinade

  • 1 tsp sesame oil
  • 1 tbsp minced garlic
  • 2 tbsps minced ginger
  • 1/4 cup teriyaki sauce
  • 1/4 cup sweet chili sauce
  • 2 tbsps light brown sugar

For the sauce

  • 1/2 cup sweet chili sauce
  • 1/4 cup teriyaki sauce
  • 1 tbsp dark soy sauce
  • 2 tbsps light brown sugar
  • 1 tbsp honey

Instructions

  1. Slice the chicken thinly and marinate it in the chicken marinade for at least one hour, or up to overnight for more flavor.
  2. Thread the marinated chicken pieces onto skewers.
  3. Preheat the oven to 350°F (175°C). Bake the skewers for 15 minutes. Meanwhile, combine the sauce ingredients in a small pan, bring to a simmer, and let it thicken slightly. Brush the baked skewers with some of the sauce.
  4. Return the skewers to the oven for another 10 minutes. Before finishing, brush again with sauce and broil briefly to caramelize the glaze, watching closely so it doesn’t burn.
  5. Brush with any remaining sauce and serve immediately while hot.
