Fathead dough is a keto baking staple — made from a simple mix of cheese, eggs and low-carb flour alternatives (commonly almond or coconut flour). It’s versatile and easy to adapt into pizza crusts, bagels, biscuits, and today’s recipe: garlic flatbread.

Using a fathead-style dough with a few tweaks and classic garlic-bread flavors, this Keto Garlic Flatbread is quick to make and requires ingredients you likely already have in the kitchen. It makes a delicious side or appetizer and pairs well with keto-friendly sauces and casseroles.

Ingredients Needed to Make Keto Garlic Flatbread

Ingredient quantities are in the recipe card below.

Terrasoul Coconut Flour: Coconut flour works well in many keto baked goods. Use a trusted brand for consistent results.

Swerve Confectioners Sugar Replacement: A zero-net-carb sugar substitute that measures like powdered sugar and won’t affect blood sugar when subtracted from net carbs.

Kitzini Silicone Baking Mats: Optional but recommended — silicone mats or parchment make rolling and cleanup far easier.

How to Make Keto Garlic Flatbread

This summary covers the main steps; see the recipe card below for full measurements and details.

Preheat the oven to 425°F and line a baking sheet with parchment paper or a silicone baking mat (recommended). In a small bowl, whisk together coconut flour, confectioners sweetener, baking powder, and salt.

In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave 45 seconds, stir, then microwave another 45 seconds and stir until the cheese is well combined. If needed, microwave a few more seconds to soften the mixture so it’s easy to work with.

In a separate bowl, mix the eggs and heavy cream, then add the dry flour mixture. Add the warm cheese mixture and knead with clean hands until a dough forms. If the dough becomes too stiff, warm it briefly in the microwave to soften.

Place the dough on the prepared baking sheet and roll or press it into a rectangle about 1/3″ thick — placing parchment or a silicone mat on top and rolling helps keep the dough from sticking. Bake the crust for about 7 minutes, then remove and set aside while you prepare the topping.

Mix melted butter with garlic powder, onion powder, and a pinch of salt. Brush this garlic-butter evenly over the par-baked crust, then sprinkle grated Parmesan across the surface. Return to the oven for another 4–5 minutes, until the top is golden brown. Cool slightly, slice into eight pieces, and serve. Optionally add shredded mozzarella and broil briefly until melted for an extra cheesy finish.
