Smoked Salmon Brunch Board

Ingredients
- 2 lbs smoked salmon (mix of cold smoked and hot smoked if desired)
Quick pickled shallots
- 1 large shallot, thinly sliced
- 1/2 cup apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon salt
Lemon dill whipped cream cheese
- 8 ounces cream cheese, softened
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
- 1/2 teaspoon sea salt
Other additions
- 6 hard boiled eggs (or 6-minute eggs)
- 6 mini bagels or regular bagels
- 8 oz assorted sliced bread or crackers
- 1 lb assorted grapes
- 1 lb strawberries
- 2 blood oranges, sliced
- 1 cucumber, sliced
- 1 bunch radishes, sliced
- 1 cup cherry tomatoes
- 1 avocado, sliced
- 1 cup olives
- 1 lemon, sliced
- Fresh dill sprigs for garnish
Instructions
Prepare the quick pickled shallots
- Peel and thinly slice the shallot, then place the slices in a jar or bowl.
- In a small saucepan, bring the apple cider vinegar, maple syrup, and salt to a boil. Reduce heat and simmer 5 minutes, then pour the liquid over the shallots.
- Let stand at room temperature for at least 1 hour. For best flavor, cool completely, cover, and refrigerate overnight.
Prepare the lemon dill whipped cream cheese
- Put the softened cream cheese in a medium bowl and beat with a handheld mixer until light and fluffy, about 2–3 minutes.
- Add lemon zest, lemon juice, chopped dill, and salt. Beat until well combined and smooth.
Assemble the brunch board
- Place the smoked salmon in the center of your board. Arrange the lemon-dill whipped cream cheese in two small bowls on opposite sides of the board.
- Position bagels, bread, or crackers near the spreads. Arrange eggs, fruits, vegetables, olives, and pickled shallots in visually appealing groupings around the salmon.
- Fill any gaps with lemon slices and dill sprigs. Serve and enjoy.
