Swedish meatballs, known in Sweden as köttbullar, are widely regarded as a national favorite and are enjoyed around the world. They pair especially well with a creamy sauce and mashed or boiled potatoes. While some prefer a brown gravy, a cream-enhanced sauce gives the dish its characteristic richness and silky texture.
Lingonberry sauce, similar to cranberry sauce, is a traditional accompaniment. It adds a bright, slightly tart contrast to the savory meatballs. Lingonberry preserves can be harder to find in some areas, but they are available online for those who want an authentic touch.

Classic Swedish meatballs use a blend of ground beef and pork, seasoned with warm spices such as nutmeg and allspice. A small amount of day-old bread soaked in cream lightens the texture, producing tender meatballs. The patties are seared in butter to develop color and flavor, then finished in the oven to cook through evenly.
Mashed potatoes are the most common side: simply boil peeled and chopped potatoes until tender, drain, then mash with butter and cream or milk. Season with salt and pepper to taste. The creamy potatoes are an ideal base for spooning gravy and meatballs.
A Swedish cucumber salad is another traditional side that brings a sweet-and-sour freshness to the plate, balancing the richness of the meatballs and gravy.
IKEA, the Swedish furniture and home goods company, has popularized Swedish meatballs globally; the chain serves a very large number of portions every day in its stores worldwide. This wide exposure helped make köttbullar familiar to many people outside Sweden.
For those interested in exploring more Swedish cuisine, classic dishes like Toast Skagen and Kladdkaka are good next steps—both represent different facets of Sweden’s food heritage, from seafood appetizers to rich desserts.

Ingredients
- 2 pieces day-old white bread, crumbled
- 1/2 cup heavy cream
- 1 teaspoon butter plus 1 tablespoon butter, divided
- 1 small onion, minced
- 2/3 pound ground beef
- 1/3 pound finely ground pork
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground ginger
- 1 egg
- 1/4 cup beef stock
Brown Gravy
- 2 tablespoons Swedish meatball pan drippings
- 2 tablespoons flour
- 2 cups beef stock
- 4 ounces sour cream
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350º F.
- Place the crumbled bread and cream in a small bowl, mix, and let stand about 10 minutes until the bread absorbs the cream.
- Melt 1 teaspoon of butter in a large, shallow skillet and cook the minced onion over medium heat until lightly browned, about 10 minutes. Transfer the onion to a large bowl.
- Add both meats, brown sugar, salt, spices, and the egg to the bowl with the onion. Mix until nearly combined, then add the moistened bread and mix gently until incorporated.
- Melt the remaining tablespoon of butter in the skillet over medium heat. Form the meat mixture into balls about 1 1/2 tablespoons each and brown them in batches, about 5 minutes, until evenly golden. The centers may still be slightly pink.
- Transfer the browned meatballs to a baking dish, pour in 1/4 cup beef stock, cover with foil, and bake for 40 minutes until cooked through and tender.
- Remove the meatballs to a serving dish and prepare the gravy using the pan drippings.
Brown Gravy
- Pour the pan drippings into a saucepan over medium heat. Whisk in the flour and cook until the mixture turns light golden.
- Slowly whisk in the beef stock and simmer until the gravy thickens, about 5 minutes. Season with salt and pepper.
- Just before serving, stir in the sour cream to add creaminess and depth.
- Serve the meatballs and gravy warm with mashed or boiled potatoes, lingonberry sauce, and cucumber salad.
