This isn’t a “health” casserole, but it’s noticeably less indulgent than the original. Most of the calorie savings come from cutting back the butter and sugar in the filling. I kept the topping rich — it’s the heart of the experience — though you could reduce the sugar there and add more oats or flour if you prefer.

- 3 pounds uncooked sweet potatoes sliced 1/8 inch thick or cubed
- 1 cup dark brown sugar unpacked
- 2 eggs lightly beaten
- 1 ½ teaspoons vanilla
- ½ cup low fat milk
- ½ cup melted butter
- pinch salt
For the Topping:
- ½ cup dark brown sugar packed
- ⅓ cup flour
- 5 tablespoons melted butter
- 1 cup chopped pecans toasted
- Dash cinnamon
- Pinch kosher salt
Instructions

Preheat oven to 350°F (175°C).

In a large bowl, whisk together brown sugar, eggs, vanilla, milk, melted butter and a pinch of salt until combined.

Place sweet potatoes in a pot and cover with cold water. Boil until tender when pierced with a fork, then drain thoroughly.

Toss the hot sweet potatoes with the butter mixture. If you prefer a smooth filling, puree now or press the drained potatoes through a ricer.

Transfer the mixture to a 1½–2 quart casserole dish, spreading evenly.

Combine the topping ingredients—brown sugar, flour, melted butter, toasted pecans, cinnamon and a pinch of kosher salt—in a bowl. Sprinkle evenly over the filling.

Bake for 30–40 minutes, until the topping is golden and the casserole is bubbling around the edges. Serve warm.
