As Easter approaches, I’ve been finishing touches on baskets, planning the menu, and arranging a pastel tablescape. We like to offer something special each year—Derrick usually devises a new cocktail, but this time I created a bright, kid-friendly mocktail that’s just as fun for adults. I added an optional pastel gumball garnish for a playful touch.
How to make homemade blueberry simple syrup
For the mocktail you’ll need a few basic ingredients and ice. You can make your own blueberry simple syrup (recipe below) or use a store-bought version.
- 1 cup blueberries
- 1 cup water
- 1 cup sugar
Directions to make blueberry simple syrup
Place the blueberries, water, and sugar in a saucepan and bring to a gentle boil for 2–3 minutes. Remove from heat, cover, and let the mixture steep for 15–20 minutes. Strain out solids and cool before using. The syrup will keep in the refrigerator for about two weeks.

Ingredients needed to make an Easter Mocktail:
- 2 oz lemon-lime soda (Sprite or 7-Up)
- 1.5 oz blueberry simple syrup
- 1.5–2.0 oz guava juice (or substitute a passion fruit-style juice)
- Ice
- Optional: pastel gumballs or Easter-flavored gumballs for garnish

Directions:
- Fill a tall glass (or a 6 oz cup) with ice.
- Add the lemon-lime soda, blueberry simple syrup, and guava juice.
- Top with a little extra blueberry syrup and a splash more soda for color and fizz.
Tip: For a slightly sweeter version, add a splash of pink cranberry juice.
For Easter dinner we often serve lamb, ribs, or Cornish hens with a selection of sides and desserts. This year we kept dessert easy by turning a confetti ice cream cake into an Easter-themed cake—simple and festive.

I picked up a confetti ice cream cake and dressed it up with pastel decorations. It’s a quick way to make a holiday dessert without a lot of work.
This Easter mocktail pairs well with dinner, a spring brunch, or a baby shower—any occasion that benefits from a colorful, alcohol-free option.
