Ingredients for Blue Cheese Mushroom Crostini:

  • 1 baguette, sliced (or pre-made crostini/toasts)
  • Blue cheese salad dressing
  • White or baby bell mushrooms, sliced
  • Swiss cheese, pre-sliced
  • Butter (or olive oil)
  • Flat-leaf Italian parsley, chopped (optional)

How to make Blue Cheese Mushroom Crostini:

  • Slice the baguette: Preheat oven to 350°F (175°C) and slice the baguette into thin rounds.
  • Brush with fat: Lightly brush each slice with melted butter or olive oil.
  • Bake: Bake the slices for 15–20 minutes or until golden, flipping halfway to brown both sides evenly. If using pre-baked crostini, skip this step.
  • Sauté mushrooms: In a skillet, sauté sliced mushrooms in 1–2 tablespoons of butter until softened and lightly browned. Let cool slightly.
  • Chop mushrooms: Reserve some attractive sliced mushroom pieces for topping, and roughly chop the rest to use as a filling.
  • Assemble: Spread a thin layer of blue cheese dressing on each toast. Add a spoonful of the chopped sautéed mushrooms, then top with a small slice of Swiss cheese and a reserved mushroom slice if desired.
  • Broil: Place crostini under the oven broiler on low just until the Swiss melts. Watch closely to prevent burning.
  • Garnish (optional): Sprinkle with chopped Italian parsley before serving.

How to store Blue Cheese Mushroom Crostini:

These crostini are best served fresh and crisp from the oven. If you have leftovers, store them covered in the refrigerator for up to two days. Reheat briefly in the oven until warm to restore some crispness.

Make-ahead tips:

You can sauté the mushrooms ahead of time and refrigerate them until you’re ready to assemble. The toasted rounds or pre-baked crostini can also be prepared in advance. Assembled crostini are great served warm or at room temperature, making them a flexible option for entertaining.

Other dips and sauces to try on crostini:

This recipe uses a blue cheese salad dressing for its bold flavor, but you can get creative with other spreads. Try any of these for variety:

  • Ranch dressing
  • Marinara sauce
  • Buffalo hot sauce
  • Mayonnaise
  • Garlic butter

Author Kami | NoBiggie.net

Ingredients

  • 1
    baguette
    sliced
  • Blue Cheese salad dressing
  • white or baby bell mushrooms
    sliced
  • swiss cheese
    pre sliced
  • butter
  • flat leaf Italian Parsley
    chopped* optional

Instructions

  1. To start slice up the baguette. Preheat your oven to 350.
  2. Brush each slice with butter or olive oil.
  3. Bake for 15-20 minutes or until golden. Flip the “tiny toasts” over mid baking to ensure they are golden on both sides.

  4. Saute the mushrooms in about 1 – 2 tablespoons butter.
  5. Once cooked and cooled, chop up (even smaller) some of the sauteed mushroom pieces leaving out a bunch of the pretty sliced pieces for the tops of the crostini.
  6. To assemble the toasts. Start with a spread of the blue cheese dressing. Top with the chopped up sauteed mushrooms followed by a small slice of swiss cheese.

  7. Turn on your oven’s broiler to low heat and place your pan of tiny toasts under the broiler for a short time just to melt the swiss cheese. Watch them the whole time (do not walk away during this step).
  8. *Optional Garnish: top with chopped Italian Parsley
