I adore sweet potatoes. They’re delicious simply baked, mashed into a casserole, or roasted with bright, complementary ingredients like in this recipe.

Too often sweet potatoes are saved only for holiday meals, and I don’t understand why. They’re always on my holiday table, but I enjoy them year‑round.

Sweet potatoes are packed with vitamins, minerals and fiber, and they have a relatively low glycemic index. Best of all, they taste indulgent even when they’re good for you.

Ingredients

  • 2 Pounds Sweet Potatoes Peeled and Cubed
  • 1/4 Cup Butter Melted
  • 1/4 Cup Maple Syrup
  • 1/4 Cup Brown Sugar Firmly Packed
  • 1/4 Cup Dried Cranberries
  • 1/2 Cup Pecans Coarsely Chopped
  • 1/4 Teaspoon Dried Ground Cinnamon
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the sweet potatoes, melted butter, maple syrup, brown sugar, dried cranberries, pecans, cinnamon, salt and pepper. Toss until everything is evenly coated.
  • Spread the mixture in a single layer on a large rimmed baking sheet so the pieces roast rather than steam.
  • Roast until the sweet potatoes are tender and slightly caramelized, about 15–25 minutes depending on how soft you like them. Serve warm and enjoy.
