Smoked Bacon & Mushroom Filo Tartlets
I’m trying to eat healthier but fancied a bake, so I popped to the supermarket and developed these Smoked Bacon & Mushroom Filo Tartlets. I believe healthy food should still taste great — there’s no point eating bland food if you can’t enjoy it.
These tartlets are a lighter take on the classic cheese and bacon quiche. Because I’m avoiding shortcrust pastry at the moment, I experimented with filo pastry. It’s low in calories and stretches a long way, making it perfect for a lighter bake.

I made mine in tartlet tins, but they work well in a muffin tin too — you’ll get slightly smaller portions if you do, which could reduce WeightWatchers SmartPoints further.
About these Smoked Bacon & Mushroom Filo Tartlets
For four tartlets:
- 1.5 Syns if you use some of your HA
- 4 WeightWatchers SmartPoints each
Despite being light, they’re packed with flavour from eggs, cheese, smoked bacon and mushrooms. No compromise on taste.

Serving suggestions
These tartlets are perfect for a summer lunch outdoors: warm tartlets with a big salad and a side of coleslaw or potato salad. They’re also great for picnics or packed lunches. For a simple evening meal, serve with baked beans or (if you fancy) chips — the kids will love them too. They’re handy party food at Christmas when you need to feed a crowd.

Can you freeze filo tarts?
They’re best eaten fresh, but you can freeze them for up to a month if wrapped carefully and stored in an airtight container. Filo pastry is delicate, so take care when handling frozen or thawed tartlets to avoid breakage.

Bacon & Mushroom Filo Tartlets

Ingredients
- 40 g 2–3 sheets filo pastry
- Spraylite oil 1 cal spray
- 4 Smoked bacon medallions cut into small pieces
- Handful button mushrooms sliced
- 2 Medium free-range eggs
- 1/4 pt Skimmed milk
- Salt and black pepper
- 40 g Half-fat strong cheese 10g per tartlet
- Chives Parsley for garnish (optional)
Instructions
- Preheat the oven to 180°C / 350°F / Gas 4.
- Spray your tart tins or a muffin tin with fry lite spray.
- Cut a sheet of filo pastry into approximately six squares (about 8cm each, depending on the sheet size).
- For each tartlet, layer three filo squares at varying angles, spraying between each layer. Use at least three layers so the tartlets are sturdy enough to hold the filling.
- Dry-fry the bacon and mushrooms in a pan until golden. Divide into four portions and place a portion into each tartlet case.
- In a measuring jug, beat the eggs with the milk and season with salt and black pepper.
- Pour the egg mixture evenly into the four tartlets.
- Top each tartlet with 10g of cheese, add a quick spray of frylite, and bake on the top shelf for 30–35 minutes until set and golden.
