Ingredients:
1 pint strawberries — hulled, washed, thoroughly dried, and sliced
1 (16-ounce) container small-curd cottage cheese
1 (3-ounce) package strawberry gelatin powder (unprepared)
1 (8-ounce) container whipped topping, thawed
1/3 cup chopped pecans
Directions:
In a large mixing bowl, sprinkle the strawberry gelatin powder over the cottage cheese. Stir well, making sure to scrape the bottom and sides of the bowl, until the powder is completely incorporated into the cottage cheese.
Gently fold the sliced strawberries into the cottage cheese mixture so the fruit remains intact and evenly distributed.
Carefully fold in the thawed whipped topping until the mixture is smooth and uniform. Transfer the mixture to a serving dish or individual bowls.
Sprinkle the chopped pecans on top, cover, and refrigerate for at least 3 hours to allow the flavors to meld; overnight chilling yields the best texture and flavor.
