- 2 lbs skinless boneless chicken breasts – cut into 6 fillets
- 1 cup Panko breadcrumbs
- 1 cup reduced fat sharp cheddar – shredded
- ½ cup liquid egg substitute – or egg whites
- 10.75 oz reduced fat cream of chicken soup – 1 can
- ¼ cup fat free sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp salt
- ¼ tsp black pepper

Preheat the oven to 400°F (200°C). Lightly spray a 9″ x 13″ baking dish with cooking spray and set it aside.

Set up two shallow bowls: one with the liquid egg substitute (or egg whites) and the other with 1/2 cup of the shredded cheddar, the Panko breadcrumbs, onion powder, garlic powder, dried parsley, salt, and black pepper. Mix the dry ingredients together.

Season each chicken fillet with a little salt and pepper. Dip a fillet into the egg mixture, letting excess drip off, then press it into the Panko-cheddar mixture to coat well. Place the coated fillets in the prepared baking dish. Repeat with the remaining pieces.

Cover the dish with foil and bake for about 30 minutes, or until the chicken is cooked through. Remove the foil and bake another 8–10 minutes until the edges turn golden and crisp.

While the chicken bakes, warm the reduced-fat cream of chicken soup in a small saucepan over medium heat. Stir in the fat-free sour cream and the remaining shredded cheddar until the cheese melts and the sauce is smooth. If the sauce is too thick, thin it with 1–2 tablespoons of chicken broth or water.

When the chicken is done, spoon the cheddar sauce over each piece and, if desired, garnish with fresh chopped parsley before serving.
