Description

A straightforward whole wheat waffle batter that balances wholesome ingredients and familiar flavor. These waffles are slightly heartier than those made with all-purpose flour but remain light and crisp when cooked properly.


Ingredients

  • 2 eggs, beaten
  • 1 ¾ cup milk (unsweetened almond milk works well)
  • ¼ cup coconut oil, melted
  • ¼ cup unsweetened applesauce
  • 6 oz Greek yogurt (any flavor; plain is fine)
  • 1 ¾ cup whole wheat flour
  • ¼ cup ground flaxseed
  • 1 Tbsp honey
  • 2 tsp baking powder

Instructions

  1. In a large bowl, whisk together the eggs, milk, melted coconut oil, applesauce, and Greek yogurt until smooth.
  2. Stir in the whole wheat flour, ground flaxseed, honey, and baking powder. Mix until just combined; avoid overmixing.
  3. Preheat and lightly grease your waffle iron according to the manufacturer’s instructions.
  4. Pour batter onto the hot waffle iron and cook until the waffles are golden and crisp. Cooking time will vary by appliance.
  5. Remove waffles and keep warm on a wire rack while you finish the rest of the batch to preserve crispness.

Notes

This recipe yielded six large waffles in my waffle iron; you can make smaller waffles to increase the yield. To freeze, cool completely, then place waffles in a single layer on a baking sheet to freeze. Once firm, transfer them to a freezer bag. Reheat in a toaster or oven until heated through and crisp.
