These Vegan Buckeyes are a favorite at my house for game day. Smooth peanut butter centers coated with a dairy-free chocolate ganache make for a rich, crowd-pleasing treat. The recipe is straightforward and uses simple, wholesome ingredients.

Ingredients For These Vegan Buckeyes:
- Almond flour – Adds body and helps the peanut butter mixture hold its shape. Avoid substituting with other gluten-free flours, as textures vary.
- Peanut butter – Use natural peanut butter with no added oils, sugars, or other additives for best results.
- Coconut milk – Used to create a smooth dairy-free chocolate ganache.
- Coconut oil – Helps make the peanut butter centers silky and easy to roll.
- Vanilla – Adds a warm flavor note; optional if you don’t have it.
- Maple syrup – Sweetens the centers and helps bind them.
- Sea salt – Balances the sweetness; omit if you prefer.
- Dairy-free chocolate – Any good-quality dairy-free chocolate works for the ganache; choose a brand you trust.

How To Make Vegan Buckeyes:
- Combine the almond flour, peanut butter, coconut oil, vanilla, maple syrup, and a pinch of sea salt in a large bowl. Mix thoroughly until smooth and uniform. Chill the mixture in the freezer for about 2 hours so it firms up and becomes easy to scoop and roll.
- Prepare the ganache by heating the coconut milk in a small saucepan until it just begins to simmer. Remove from heat and stir in the dairy-free chocolate until fully melted and smooth.
- Use a 1-inch cookie scoop to portion the chilled peanut butter mixture into small balls (about 15). Roll each scoop between your palms to form smooth spheres. Insert a toothpick into each ball and dip it into the ganache, leaving a small circle of peanut butter exposed at the top if you like the classic buckeye look.
- If the ganache thickens while you’re dipping, gently warm it in 15–30 second intervals in the microwave, stirring between heats until smooth again.
- Place the dipped buckeyes on a baking sheet and refrigerate or freeze until the chocolate sets. Store refrigerated for short-term serving or freeze for longer storage.
Can I Freeze These Buckeyes?
- Yes. Freeze the finished buckeyes on a metal tray for about an hour so the chocolate and centers firm up, then transfer to an airtight container. They keep well in the freezer for months.
