This veggie and shamrock platter makes a great after-school treat. Our platter featured kid-friendly fillings such as plain cream cheese, cream cheese with thinly sliced cucumber, shredded cheddar, and a cheddar-spinach mix. Think about what your family likes — peanut butter and banana inside a green shamrock is a tasty alternative for older kids.

No formal recipe is required. Spread your chosen filling over one tortilla, top with a second spinach tortilla, then press the shamrock cookie cutter through both layers to cut shapes. A practical tip: fill and stack the tortillas first, then cut — trying to spread filling on already-cut shamrocks and align them is messy and unnecessary.

These stack-and-cut snacks are versatile. Use softened cream cheese for easy spreading, finely chopped vegetables for texture, or grated cheese for a melty option if you plan to warm them briefly. For a crunchy component, add thin cucumber slices or shredded carrots. For protein, try nut butter or thinly sliced turkey. Keep portions small for younger children.
