Chocolate Caramel Chex Mix is a crowd-pleasing snack for parties, gatherings, or a cozy family movie night. Made in the microwave, it’s quick and easy to prepare.

Planning for New Year’s Eve or any celebration? Whether you’re heading to a neighborhood party or staying home with the kids, a tasty snack is always a must. I admit I’ll sometimes skip decorations, but good food is non-negotiable—especially at parties.
This Chex mix combines caramel and chocolate for a sweet, crunchy treat that’s always a hit. Because it’s made in the microwave, it comes together fast and with minimal fuss. If you’re short on time, you can chill the finished mix in the freezer or refrigerator to speed up the chocolate setting.

Chex mixes are portable, shareable, and always popular at gatherings. This version offers a rich caramel coating with a chocolate drizzle that adds extra flavor and visual appeal. You can make it as crunchy or as gooey as you like: shorter microwaving yields a softer, chewier mix, while longer cooking deepens the caramel flavor and crispness.

Ingredients
- 3 cups Corn Chex
- 3 cups Rice Chex
- 7 oz caramel candies unwrapped (about 25 caramels)
- 2 Tbsp butter
- 2 Tbsp milk
- ¼ cup semi-sweet chocolate chips
Instructions
-
Combine the Corn Chex and Rice Chex in a large microwave-safe bowl; set aside.
-
In a small glass bowl, combine the unwrapped caramels, butter, and milk. Microwave on high about 3 minutes, stirring every minute, until the mixture is smooth and creamy. Pour the caramel over the cereals and toss gently to coat.
-
Microwave the coated cereal on high for 3–4 minutes, stirring every 60 seconds. The Chex mix is done when it just begins to brown.
-
Spread the mixture on waxed or parchment paper to cool.
-
Melt the chocolate chips in the microwave at half power, stirring every 30 seconds until smooth. Drizzle the chocolate over the cooled cereal mixture and let it set before serving. To speed this up, chill the mix in the fridge or freezer until the chocolate firms.
