Happy day-before-Valentine’s Day! We’re not overly sentimental around here, and we don’t go all out for Valentine’s Day every year. That said, my husband does surprise me sometimes—this year he’s taking me to one of my favorite stores: IKEA. It just happened to fall during heart week, so there were lots of fun props and new furnishings to enjoy.

I love holidays because they give me an excuse to bake themed treats without getting teased too much. This year I may have gone a little overboard with pink and red desserts, so today I’m sharing one more—then I’ll give you a break from the heart-shaped sweets for a while. It’s easy, delicious, and a clever way to use up leftover peppermint marshmallows.

Peppermint Marshmallow Brownie Bites are simple: a pan of brownies, mini peppermint marshmallows, and white melting chocolate. Once you assemble and dip them, they tend to disappear almost as quickly as you make them.

Brownie bites filled with mini marshmallows and dipped in white chocolate—perfect for holiday trays and gift boxes.

Ingredients

  • 1 brownie mix (9×13)
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water
  • 42 mini peppermint marshmallows
  • 12 ounces white chocolate melting wafers
  • sprinkles

Instructions

  1. Bake the brownies following the directions for two eggs on the box. Do not overbake—you want the brownies moist and fudgy. Let them cool completely.
  2. Cut the cooled brownies into 42 small pieces. Flatten each piece, place a mini peppermint marshmallow in the center, then roll the brownie around the marshmallow to form a ball. Arrange the balls on a wax paper–lined tray and freeze for about 20 minutes to firm up.
  3. Melt the white chocolate wafers in the microwave in 30-second intervals, stirring between each, until smooth and creamy. Using a toothpick or fork, dip each chilled brownie bite into the melted chocolate, letting the excess drip off. Return to the wax paper and decorate with sprinkles or colored sugar. Let set completely.
  4. Store the finished brownie bites in a sealed container at room temperature. This recipe yields about 42 brownie bites.

Notes

*If you can’t find mini peppermint marshmallows, regular mini marshmallows work well too.
