Glazed Peanut Butter Bars

Cookie bars are one of the quickest desserts to make, and these peanut butter bars are no exception. The batter comes together quickly and bakes into soft, peanut-buttery squares that are finished with a silky peanut butter glaze. When I’m short on time or want a guaranteed crowd-pleaser, I reach for this recipe adapted from Paula Deen.

How to make the peanut butter glaze

  1. In a microwave-safe measuring cup, melt together 1 tablespoon butter and 1/2 cup peanut butter. Stir until smooth.
  2. Add 1/2 teaspoon vanilla extract (or cooled coffee for a subtle flavor) and whisk again.
  3. Beat in 1 cup powdered sugar until the glaze is smooth and spreadable.
  4. If the glaze is too thick, add a splash of milk to reach a good spreading consistency.
  5. Spread the glaze over the warm bars and let cool completely so the glaze sets before cutting.

Glazed Peanut Butter Bars

Ingredients

  • 1 tablespoon unsalted butter
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (or cooled coffee)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter (for glaze)
  • 4 tablespoons peanut butter (for glaze)
  • 1/2 teaspoon vanilla (for glaze) or cooled coffee
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 13″ x 9″ pan with aluminum foil and lightly grease the bottom and sides.
  3. In a large microwave-safe bowl, melt together 1/2 cup peanut butter and 1 tablespoon butter. Whisk until smooth.
  4. Add both sugars and whisk to combine. Stir in the vanilla (or cooled coffee) and eggs until the mixture is smooth.
  5. In a separate bowl, whisk the flour, baking powder, and salt. Add the dry ingredients to the wet mixture and whisk until smooth.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake 25–30 minutes or until a toothpick inserted in the center comes out clean and the edges are lightly golden.
  8. While the bars cool, prepare the glaze: melt 2 tablespoons butter with 4 tablespoons peanut butter in a microwave-safe measuring cup and whisk until smooth.
  9. Add 1/2 teaspoon vanilla (or cooled coffee) and whisk again.
  10. Beat in 1 cup powdered sugar until the glaze reaches a smooth, spreadable consistency. If needed, add a splash of milk to thin.
  11. Spread the glaze over the warm bars and allow them to cool completely so the glaze sets.
  12. Once cooled, cut into bars and serve.
