When I was growing up in Chicago there was a tiny hot dog stand on a busy corner called Toots. It was basically a shack with a drive-through window and room for only a few cars. The place wasn’t fancy and the staff were often teenagers, but the food was reliably hot and satisfying.

Toots had a simple menu full of neighborhood favorites — hot dogs, zebra cones, fried cheese balls — and a long list of milkshake flavors. I experimented with odd combinations over the years, including an adult Mexican chocolate milkshake, but my favorite was always marshmallow and peanut butter. That classic pairing inspired this toasted marshmallow peanut butter milkshake.

Making this milkshake is straightforward and fun. The main extra step is toasting the marshmallows for a smoky, caramelized flavor that pairs beautifully with creamy peanut butter. I use wooden skewers soaked in water so they won’t catch fire, then carefully toast the marshmallows over a gas burner until they reach the color and texture I want.

Be careful when toasting marshmallows. If younger cooks are involved, have an adult supervise. Once toasted, I slide two marshmallows at a time off the skewer with a butter knife and drop them directly into the blender. Add the remaining ingredients and blend until smooth.

Finish the milkshake with a generous swirl of whipped cream and a few extra marshmallows on top — you can toast a few more to use as a garnish. For an added touch, make a quick peanut butter syrup by gently warming 1/2 cup honey with 1/4 cup peanut butter over low heat until combined, then cool slightly before drizzling.

This combination of smoky marshmallow and rich peanut butter makes a dessert beverage that feels both nostalgic and indulgent.
