When planning our first trip to Walt Disney World I quickly realized how passionate people are about recreating park favorites at home. From Mickey waffles to Dole Whip and themed cupcakes, guests love bringing a bit of Disney magic back to their kitchens.
One release that caught my eye from the Not-So-Scary Halloween menu was the Cold Witches Brew Coffee — French vanilla cold brew with pumpkin spiced foam and Halloween sprinkles — and I knew I had to recreate it.
If you’re at the park, you can find this drink at the Cheshire Café in Magic Kingdom.
I’ve been making cold brew at home for years, and when I retired from full-time work I received a milk frother that changed how I prepare lattes and cold foam. That frother produces silky hot foam and fluffy cold foam, which helped me develop a pumpkin-spiced foam similar to what you’ll find in cafés.

This version of pumpkin cold foam is lighter than recipes that rely on pumpkin purée and is tailored to mimic Disney’s pumpkin-spiced topping while keeping the texture airy and stable on cold brew.

While similar to a pumpkin cream foam you might see elsewhere, this recipe uses different proportions and ingredients to achieve that bright, spiced, slightly orange-tinted look and light texture.
WHAT IS COLD WITCHES BREW COFFEE?
Cold Witches Brew Coffee is essentially French vanilla cold brew topped with a pumpkin-spiced cold foam. The foam is lightly sweetened and whipped to a billowy texture, then optionally tinted and garnished with Halloween sprinkles for the full seasonal effect.
INGREDIENTS
This recipe has two parts: the cold brew base and the pumpkin spice cold foam.
COLD BREW
You can use homemade cold brew, cold brew concentrate (diluted to taste), or ready-to-drink cold brew. For this recipe you’ll want about 8 ounces (1 cup) of prepared cold brew.
Note: homemade cold brew needs about 24 hours to steep, so plan ahead if making your own.

PUMPKIN SPICE COLD FOAM
This foam balances light sweetness with fat from heavy cream so it foams up fluffy without becoming heavy. The ingredients are simple and easy to source.

Main foam ingredients:
- Heavy whipping cream — provides body and stable foam structure.
- Milk — any type will work; whole, skim, or plant-based milks are fine (avoid coconut if the flavor would clash for you).
- Maple syrup — a light sweetener that complements warm spices while keeping the foam airy.
- Vanilla paste or extract — adds depth and rounds the flavor.
- Pumpkin pie spice — the spice blend that gives the foam its seasonal character.
- Orange gel food coloring — optional, for that classic orange tint.
- Halloween sprinkles — optional, for a festive garnish.

HOW TO MAKE COLD WITCHES BREW COFFEE
Have your cold brew prepared and chilled. I like to make the foam first, then assemble the coffee over ice so it stays cold. Coffee ice cubes are a great option to avoid diluting the drink.

To make the foam, whisk together heavy cream, milk, maple syrup, vanilla, and pumpkin pie spice. Chill the mixture if your frother does not cool foam as it whips. Use a frother, handheld frother, blender, or single-serve blender to whip the mixture until billowy.
Assemble: pour your cold brew into a cup, sweeten with a little maple syrup and vanilla if desired, add ice, then spoon the pumpkin spice cold foam on top and finish with sprinkles if you like.
OPTIONS IF YOU DON’T HAVE A MILK FROTHER
A dedicated electric frother makes this quick and keeps the foam chilled, but you can also use a handheld frother, a blender, or a single-serve personal blender. Whisking vigorously by hand will work in a pinch, though it takes more effort.

MAKE THE FOAM
Whip the chilled mixture until it becomes fluffy and billowy. Pour the cold brew into a glass, top with the foam, and add sprinkles. If you have leftover foam, store it covered in the refrigerator and re-whip before serving; it won’t retain peak volume indefinitely.

This recipe yields a single serving, just like the park version, and is an easy, cost-effective way to enjoy a seasonal specialty at home — pajamas optional.

Ingredients
COLD BREW
- ½ cup (120mL) cold brew coffee concentrate or ready-to-drink cold brew or homemade cold brew
- ½ cup (120mL) water
- ½ Tablespoon (8 mL) maple syrup
- ½ teaspoon vanilla paste or vanilla extract
PUMPKIN SPICE COLD FOAM
- 2 Tablespoons (30mL) heavy whipping cream
- 2 Tablespoons (30mL) milk
- ½ to 1 Tablespoon (8-15mL) maple syrup
- ½ teaspoon vanilla extract
- ⅛ teaspoon pumpkin pie spice
- orange gel food coloring optional
- Halloween sprinkles optional

COLD BREW

If making your own cold brew, follow a standard 24-hour steep method. If using concentrate, dilute to make 1 cup (8 ounces) of prepared cold brew.

If using ready-to-drink cold brew, measure 1 cup (8 ounces) and chill.
PUMPKIN SPICE COLD FOAM

Combine heavy cream, milk, maple syrup, vanilla, pumpkin pie spice, and a drop of orange gel coloring if using. Chill until cold if your frother does not cold-whip.

Prepare your cup of cold brew. Stir in maple syrup and vanilla to taste, add ice if desired.

Whip the foam mixture using a frother or blender until fluffy. Spoon the foam over the cold brew and top with Halloween sprinkles if you like. Store any leftover foam covered in the fridge and re-whip before serving.
Notes
- Maple syrup: adjust the amount to suit your sweetness preference.
