Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 med shallot chopped
- 2 garlic cloves minced
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 cup water
- 2 cups sweet potato cubed
- 2 cups kale roughly chopped

Heat the oil in a cast-iron skillet over medium-high heat. Add the ground beef, shallot and garlic, and cook about 12 minutes until the beef is browned.

Stir in onion powder, paprika, cubed sweet potato and the water. Cover and simmer for about 10 minutes, until the sweet potatoes begin to soften.
