Make six delicious glazed blackberry air fryer handpies in about 20 minutes total. These are quick, simple to assemble, and work with either store-bought or homemade pie crust.

“Fried” handpies have always been a favorite of mine. I remember watching my grandmother fry fruit pies in a skillet when I was a child—apricot, peach, berry—and those treats remain some of my fondest food memories. Today I make a lighter version in the air fryer that delivers that same comfort without deep frying in oil.
I adapted my standard blackberry pie filling (halved the recipe) and used pie crust dough to make these compact handpies in the air fryer. They turned out wonderfully, so here’s a clear, streamlined guide to make your own.

Blackberry Filling
In a medium bowl, combine 2 cups blackberries, 1/2 cup granulated sugar, 2 1/2 tablespoons all-purpose flour, and 1/8 teaspoon ground cinnamon. If using frozen blackberries, thaw and drain any excess juice before mixing to avoid a soggy filling.
Gently stir until the ingredients are combined. Set the filling aside while you prepare the dough circles.

Cutting the Pie Crust
Roll the pie crust dough into a round large enough for a 9″ pie. If you’re using store-bought crust, you may need to roll it a bit to have enough dough to cut six 5″ circles. Use a wide mug, glass, or a mini pie tin to cut six circles.
Gather scraps, re-roll, and cut until you have six circles. These will be the bases for your handpies.

Assembling the Handpies
Place a heaping tablespoon of the blackberry filling in the center of each dough circle. Leave a rim of dough around the filling—do not spread it to the edges or you’ll have leakage during cooking.
Fold the dough over the filling and crimp the edges with the tines of a fork to seal well. Proper sealing prevents the pies from opening while cooking; a bit of filling may seep out if the seal isn’t tight, but try to avoid excess oozing for a neater result.

Brush the tops of the handpies with a beaten egg to encourage golden browning in the air fryer.

Cooking in the Air Fryer
Preheat the air fryer to 370°F. Carefully place the handpies in the basket; depending on your air fryer size you may need to cook in a single layer or in batches. I fit all six at once in my basket.
Cook at 370°F for 7–8 minutes. Start checking at 7 minutes because cook times vary by model. The handpies are done when the crust is golden brown and crisp.
Transfer finished handpies to a wire rack set over wax paper or foil to catch any glaze drips.

Glazing
Whisk 1/2 cup powdered sugar with 3–4 drops of water to form a fairly thin glaze. As the handpies cool slightly, brush the glaze over the tops with a pastry brush. Once the glaze sets, the handpies are ready to serve.


Serve warm to enjoy the tender, jammy blackberry filling inside a crisp, flaky crust.

- 2 cups blackberries
